I am always looking for different ways to cook my glut of beetroots and found this delicious recipe on you-tube. There are many slightly different recipes. Choose one that suits you.
1 kilo Beetroot
Half an onion finely chopped
2 green chillies, deseeded and chopped
1 tablespoon of ginger and garlic paste
2 teaspoons of salt
2 teaspoons of dried mango powder
2 teaspoons cumin powder
Half a cup of chopped roasted peanuts or roasted sunflower seeds
4 tablespoons flour
Quarter cup of water
Boil the potatoes until soft and mash. Finely grate the beetroot. This is a messy job and obviously quicker and easier if you use a food processor. Add the salt, onion, chilli, ginger and garlic to the beetroot. Let it rest 10 minutes. With your hands squeeze out the liquid from the beetroot mixture and add the beetroot to the mashed potato. Add the cumin, mango powder and peanuts or seeds and mix well. Chill for one hour. Blend the flour and water together to make a runny paste. Take handfuls of the beetroot mix and shape into patties, dip them in the flour paste and then breadcrumbs and fry in hot oil for 90 seconds on each side. Obviously this depends of the size of your patties. The outside should be brown and crunchy.
Serve with a spoonful of raita, chutney and a green salad or in pitta breads or burger buns.
